Creamed Leek Bake

Serves 6

Ingredients

  • 200g large diced leeks
  • 50g large diced onions
  • 25g butter
  • 1 tsp (0.005 litres) dried thyme
  • 1 tsp (0.005 litres) garlic
  • 2 slices of white bread – diced into 1cm cubes
  • 50g grated cheddar
  • bechamel sauce
  • 500ml milk
  • 1 onion halved
  • 2 bay leaves
  • 30g corn flour with 30ml cold water

Method

1. Sweat the leeks and onions with the butter until they start to colour

2. Remove from heat and place into a dish

3. Pour the bechamel sauce over the top of the leeks and onions

4. Toast the bread in a pan with a little bit of olive oil

5. Sprinkle over grated cheese

6. Bake in oven at 200°C for 10 minutes
