Tomato Relish

To be served with the burgers and chicken nuggets.

Ingredients

  • 10 x diced tomatoes
  • 3 x cloves of garlic
  • 2 x fine diced red onions
  • 100ml white wine vinegar
  • 80g caster sugar
  • ½ x tsb (0.008 litre) pepper
  • 4 x tbsp (0.07 litre) oil
  • 2 x tbsp (0.03 litre) chopped herbs

Method

1. First heat a hot pan on the stove then add the sugar

2. Once a caramel is made, add all the remaining ingredients

3. Fry for pan for 5 mins

4. Remove from the heat

5. Serve with chopped coriander
