Tomato Relish
To be served with the burgers and chicken nuggets.
Ingredients
- 10 x diced tomatoes
- 3 x cloves of garlic
- 2 x fine diced red onions
- 100ml white wine vinegar
- 80g caster sugar
- ½ x tsb (0.008 litre) pepper
- 4 x tbsp (0.07 litre) oil
- 2 x tbsp (0.03 litre) chopped herbs
Method
1. First heat a hot pan on the stove then add the sugar

2. Once a caramel is made, add all the remaining ingredients
3. Fry for pan for 5 mins
4. Remove from the heat
5. Serve with chopped coriander
