Roast Shoulder of Pork with Apple Sauce

Serves 25

Ingredients

  • 3.5kg boned and rolled shoulder of pork
  • 2 onions, sliced
  • 450ml water
  • 600g cooking apples, peeled, cored and chopped
  • 50g butter
  • Caster sugar to taste

Method

1. Preheat the oven to 200°C / 400°F / Gas Mark 6.

2. Place the onions into a deep sided roasting tray with 400ml of the water then place the pork on top.

3. Place in the oven for 30 minutes then turn the heat down to 170°C / 325°F /Gas Mark 3 and cook for another 4 hours until very tender and golden brown.

4. Remove from the oven and rest for 30 minutes.

5. Place the apples, butter and remaining 50ml water into a saucepan and cover with a lid.

6. Place on the heat and cook for 10-15 minutes over a medium heat until softened.

7. Take the lid off and beat well to a puree.

8. Add sugar to taste.
