Mushroom Stroganoff

Serves 50

Ingredients

  • 6.8kg sliced medium mushrooms
  • 400g tomato puree
  • 150g paprika
  • 50g chilli powder
  • 2kg sliced onions
  • 500ml white wine
  • 250g butter
  • 100ml oil
  • 2 pints water
  • 20g vegetable stock
  • 1 litre meadowland
  • 50g garlic puree
  • 50g chopped parsley
  • 3.75kg rice

Method

1. Melt butter with oil in pan add mushrooms, add garlic, spices and wine, cook for 10 minutes

2. Add tomato puree, stock, water and cream, bring to boil and simmer. Add parsley.

3. Thicken if necessary

4. Serve with 3.75kg steamed rice
