Penne Pasta with Tomato and Basil Sauce

Serves 10 - 12

Ingredients

  • 100ml olive oil
  • 300g onions, chopped
  • 15g crushed garlic
  • 50g tomato paste/puree
  • 1.2kg tinned tomatoes
  • 20g fresh basil, roughly chopped
  • Pinch of caster sugar to taste
  • Salt and freshly ground black pepper
  • 1kg penne pasta

Method

1. Heat the olive oil in a large saucepan, add the onion, cover and sweat for 3-4 minutes.

2. Add the garlic, tomato puree and tinned tomatoes and half the basil and bring to a boil.

3. Reduce the heat and simmer for 5-8 minutes until just thickened.

4. Add the remaining basil and adjust the seasoning to taste.

5. Bring a large pan of salted water to the boil, add the pasta and cook according to pack instructions.

6. Drain and toss the tomato basil sauce with the pasta and check the seasoning once more.
