Oriental vegetable stir-fry

Serves 10

Ingredients

  • 2 tbsp (0.03 litres) vegetable oil
  • 200g onion, sliced
  • 2 tbsp (0.03 litres) pureed garlic
  • 2 tbsp (0.03 litres) pureed ginger
  • 2 tbsp (0.03 litres) chopped red chilli
  • 300g red pepper, sliced
  • 300g green pepper, sliced
  • 300g baby corn
  • 300g broccoli florets
  • 300g mange tout
  • 3 tbsp (0.05 litres) soy sauce
  • 2 tbsp (0.03 litres) oyster sauce
  • 4 tbsp (0.07 litres) water

Method

1. Heat a large wok until smoking hot.

2. Add the oil and onion and stir fry for 2 minutes until just softened.

3. Add the garlic, ginger and chilli and stir fry for 1 minute.

4. Add the peppers and baby corn and stir fry for 2 - 3 minutes.

5. Add the broccoli and mange tout and stir fry for another 2 minutes.

6. Add the soy, oyster and water and bring to a boil.

7. Simmer for 2-3 minutes until all the vegetables are tender.
