Chicken Caesar Salad

Serves 20

Ingredients

Dressing

  • 3 garlic cloves, peeled
  • 2 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 3 anchovy fillets, roughly chopped
  • 150ml / 6fl oz olive oil
  • 100g grated parmesan cheese
  • 300ml / 12fl oz mayonnaise
  • 1 tsp salt
  • Freshly ground black pepper, to taste

Salad

  • 8x 6oz cooked chicken breast, sliced thinly
  • 5 slices fried breakfast bread - left over would be great - then cut into 2 cm croutons
  • 100g grated Parmesan cheese
  • 20 little gem lettuce cut into quarters, washed and drained

Method

Using a blender, place all the dressing ingredients in together and blend until a smooth dressing.

Blend to a purée and transfer to a bowl.

Combine the lettuce, croutons and the dressing together and arrange into the serving vessels.

Top with the sliced chicken and the Parmesan cheese and serve.
