Gammon Steak with Orange and Pineapple
Serves 10
Ingredients
- 30ml olive oil
- 90g butter
- 2kg / 10 gammon steaks
- 600ml orange juice
- 800g / 10 pineapple rounds, core removed
Method
1. Heat a frying pan until hot, add the olive oil and 60g of butter and heat until foaming.

2. Season the gammon steaks then add to the pan and fry on each side for 2 minutes until browned.
3. Add the orange juice and cook until the juice has reduced and thickened and the gammon cooked through – about 5 minutes.
4. Heat a separate frying pan until hot, add the remaining butter and pineapple rounds and fry on each side until caramelised.
5. Serve with the gammon and sauce.
