
Healthy salmon and chicken dishes
Two healthy dishes: sweet chilli salmon and chicken with pea pesto & pasta.

Honey, ginger & garlic salmon with lime & coriander rice and chilli tender-stem brocolli

This is a nice, healthy recipes which should keep you nice and full!
Serves 1
Takes about 25 minutes
Ingredients
· Salmon fillet
· honey
· 1/2 red chilli ( depending on how hot you want it)
· 1/2 clove garlic
· 1/2 teaspoon fresh ginger
· salt
· pepper
· basmati rice 1/2 cup
· coriander (handful)
· 1 lime
· Tender-stem broccoli 50g
· Chilli flakes
Method
1. Squeeze around a tablespoon of honey in to a bowl, finely chop garlic, chilli, ginger and a squeeze of lime and add to the bowl.
2. Create a bowl shape from some foil. Place on a baking tray & then put the salmon fillet in the centre, adding a small amount of water to the foil bowl. Season the salmon with salt & pepper and coat with the marinade then put in to the oven at 200c for 15-20 min.
3. Measure out half a cup of rice and rinse under cold water then put in a pan with 1 cup of water. Bring to the boil and then simmer for 10-12 min.
4. Once the rice is cooked, finely chop a handful of coriander and squeeze half the juice of a lime and stir in to the rice.
5. Place tender-stem in boiling water for 4-5min, once done sprinkle with chilli flakes.
6. Plate up and enjoy!
Lemon, garlic & thyme chicken with pea pesto and spinach linguine

Serves 4
Takes about 20 minutes
Ingredients
· Chicken breast (100g per person)
· 250g peas
· 2 garlic cloves finely chopped
· 20g grated parmesan
· handful fresh mint
· teaspoon of olive oil
· 350g dried linguine
· handful of spinach
· handful of thyme
· 1 lemon
Method
1. For the chicken marinade add the lemon juice, 1 garlic bulb, thyme, with a pinch of salt and pepper to a bowl and add the chicken (butterflied) and mix together. You can leave overnight to marinade in the fridge before cooking.
2. Add a small amount of oil to a pan and cook the chicken for 5-7 min, turning to make sure it’s cooked thoroughly.
3. Bring a pan of water to the boil and add the linguine and cook for 11-12 min
4. To make the pea pesto, pop the peas, parmesan, mint, 1 garlic bulb, and oil
Into a blend and blend roughly ( add a small amount of water if pesto too thick).
5. Once the linguine is cooked, drain and add the pea pesto and rough chop the spinach and fold in.
7. Pile the pasta onto a plate and add the chicken, sliced into thin strips. Garnish with a slice of lemon.
