Cheese and potato pie

Bake of the Day – Cheese & Potato Pie

Ingredients:

3lb floury potatoes

12oz medium or mature cheddar cheese grated

12oz bacon, grilled and chopped into inch pieces

1 onion, chopped and fried

Milk & butter to taste

Seasoning

Method:

1. Preheat oven to 200C, 180C fan, gas 5

Peel & boil potatoes until ready to mash

2. Mash the potatoes, add milk, butter, onion, bacon, 10oz grated cheese , seasoning and mix all together

3. Put this into a buttered oven-proof dish (I use a lasagne dish) & level, forking over for texture

4. Sprinkle over the remaining cheese

5. Bake in the oven for about half an hour until crisp and golden

6. Serve hot with baked beans, roasted tomatoes or veg

Veggie variation: use mushrooms instead of bacon & fry them with the onions
