Mediterranean Seafood Pot

Ingredients
- Red, yellow and green peppers
- Garlic
- Red onion
- Chopped tomatoes
- Courgettes
- Salmon fillets
- Seafood mix
Method
- Chop the peppers, red onion and garlic
- Sautee the garlic, red onion and chopped peppers in oil
- Dice the salmon and slice the courgettes
- Add the chopped tomatoes, courgettes, salmon and seafood
- Let it simmer until it’s the consistency of ratatouille
Healthy Chocolate Orange Mousse

Ingredients
- 2x avocados
- 4x tbsp coco powder
- Juice of 1 orange
- 3x tsp of honey
- 1x tbsp of coconut oil (Optional)
Method
- Scoop the flesh out of the avocado
- Add all the other ingredients and process
- Refrigerate for 20-30 mins
