Emmett McCourt's Boxty Potato

300g peeled raw grated potato
30g plain flour
150g melted butter
Salt and pepper to season
Rapeseed oil for frying
Method
Grate potato, drain off the starch and add to a bowl. Add butter and flour, season to taste and mix well.
In a non-stick pan add the oil. When the pan is hot add thin layer of boxty mix, pressing down with a spoon.
Turn when browned at side, pressing down regularly. Cook for a few minutes on each side until browned and cooked through.
