Ingredients
75g very soft butter or neutral oil
3 very ripe bananas
200g soft brown sugar
1 egg, beaten
1 tsp vanilla extract
1 tsp bicarbonate of soda
170g spelt flour
50g chopped pecans (optional)
2lb loaf tin
Method
1. Preheat the oven to 170°C/150˚C Fan/Gas 3. Line a 2lb loaf tin.
2. Mix bananas with the butter/oil in a freestanding mixer until smooth then add the egg, sugar and vanilla. Continue to mix until evenly combined. Sieve the flour with bicarbonate of soda and a pinch of salt, then fold into wet ingredients. Add any fillings such as nuts, chocolate chips or seeds at this point.
3. Pour into tin and bake for 45-55 minutes before leaving to cool.
