Jak's Nachos
Jak’s Nachos
Always preferring larger style nachos I do not use corn chips honest you will taste the difference!
1 pack of soft tortillas
1 tsp smoked paprika
2tbsp rapeseed oil
SALSA
4 ripe tomatoes diced
1 red chilli diced finely
1tbsp chopped coriander
1 shallot finely diced
Juice of 1 lime
1 garlic clove crushed
½ tsp ground cumin
Salt & pepper
TOPPING
1 ripe avocado sliced squeeze lemon over the top
4-5 dollops of crème fraiche
4-5 tbsp grated cheese
METHOD
1. Cut tortilla into 8 wedges brush with rapeseed oil and dust with smoked paprika
2. Bake in the oven at 180 until crisp
3. Add all salsa ingredients together and set aside
4. Layer on a plate sprinkling cheese in between each layer
5. Put back in the oven to melt cheese
6. Then scatter avocado on top along with dollops of crème fraiche & salsa
7. Enjoy
