Children In Need Bake Off

The icing from the bake off didn't go to waste! John's daughter Méabh took the left-overs and baked buns for Children In Need. She raised £40.16! Well done Méabh!
Coconut Key Lime Pie with Candied Pineapple and Coconut Cream

Biscuit Base
100g melted butter
300g crushed digestives or oaty biscuits
25g desiccated coconut
Mix the ingredients together and press into a pie dish right up the sides too.
8 egg yolks
200ml coconut milk
1 tin condensed milk
Zest and juice 4 limes
Whisk together and pour into the pie dish.
Bake in a 180˚c preheated oven for 40 minutes or until set on top but still wobbly.
Cool.
Candied Pineapple and Coconut Cream
½ pineapple, peeled, cored and chopped into 2cm pieces
25g desiccated coconut, toasted in oven until golden
Splash coconut liqueur (optional)
50g brown sugar
500ml whipped cream
Heat a non-stick frying pan until hot and add the pineapple.
Cook until golden brown all over and add the sugar.
Cook until sugar has dissolved and the mixture syrupy.
Cool and fold into cream with the coconut.
Spread over the pie and serve.
