Learn how to grow, cultivate and cook with beetroot and spinach, plus more on the restoration of the lost kitchen garden in Penicuik. And is seed saving a good idea?

Chef Lydie Bocquillon shows Pennie Latin how to make hot smoked salmon rillettes on a bed of wilted spinach and a Latvian beetroot salad ... all prepared live outside in the BBC garden in Inverness!

As beetroot comes into season horticultural consultant Frances Pringle shares her advice on growing and cultivating beetroot in your own garden and Lydie talks about how best to use it in the kitchen.

If you've never grown spinach before, now is a good time to sow it. Frances advises on how to get it right in the garden and Lydie gives us inspiration on using it both raw and cooked.

Is seed saving a good idea? Frances suggests some dos and don'ts if you plan to save and reuse your veg plot seeds.

In the second part of the Lost Gardens of Penicuik, historian Roger Kelly tells Pennie about their plans to restore the kitchen garden to its former glory.
