Heston's research begins at Delmonico's restaurant in New York, inventors of the dish. Convinced that its intrigue lies in its hot-cold contrast, he goes to the DIY store to buy roof insulation. Experiments take him as far as Bristol University and involve hot jam, white chocolate tubes and dry ice.
