Culinary alchemist Heston Blumenthal creates a perfect version of the Seventies dessert trolley classic, Baked Alaska.

Heston's research begins at Delmonico's restaurant in New York, inventors of the dish. Convinced that its intrigue lies in its hot-cold contrast, he goes to the DIY store to buy roof insulation. Experiments take him as far as Bristol University and involve hot jam, white chocolate tubes and dry ice.
