Sticky coriander chicken

Method

1. In a shallow dish, mix the honey, garlic, salt, pepper, coriander and olive oil.

2. Place the thigh pieces in the marinade, and leave for six hours.

3. Heat the BBQ or griddle pan and cook the thighs until golden and cooked through (approximately four minutes each side), and then serve.

Remember, the honey in the marinade will burn so keep an eye on the meat as it cooks.

Ingredients

8 chicken thighs, skin and bone removed

1 tbsp clear honey

1 garlic clove, grated

2 tbsp fresh coriander, chopped

1 lime, juice and zest

2 tbsp olive oil

1 tbsp white wine

salt and pepper, to taste
