Keto devilled eggs

Ingredients

  • 4 hard-boiled eggs
  • 1 teaspoon tabasco
  • 60 ml mayonnaise
  • 1 pinch herbal salt
  • ½ slice smoked salmon in strips
  • fresh dill (garnish)

Serves 4

Method

  1. Boil the eggs until cooked, then chill and peel
  2. Split the eggs in half and scoop out the yolks
  3. Place the egg whites on a plate and reserve to one side
  4. Mash the yolks with a fork and stir in tabasco, herbal salt and mayonnaise
  5. Bind the mayonnaise in the egg whites and top with a strip of smoked salmon
  6. Decorate with dill.

Pigs in Blankets

Ingredients

  • 24 premium pork chipolatas (ask your butcher for the carbohydrate content)
  • 6 rashes of unsmoked English bacon

Serves 12

Method

  1. Preheat the oven to 190C
  2. Next, halve each rasher of bacon and lengthen each one, flattening and stretching it without tearing, and wrap the bacon in a spiral around the length of sausage
  3. Roast in the oven for 25-30 minutes, turning after 15 minutes
  4. Before serving, check the sausages are hot all the way through, with no pink bits remaining

Cheesy stuffed mushrooms with tomato

Ingredients

  • 8 large Portobello mushrooms
  • 4 cloves garlic, crushed
  • 1 tbsp. whole grain Dijon mustard
  • 220g cheddar cheese, grated
  • 40g sun dried tomatoes
  • 3 tbsp double cream
  • Fresh curly parsley, finely chopped
  • Salt and freshly ground pepper to taste

(Serve 4)

Method

  1. Mix the garlic, mustard, cheese, cream, sun dried tomato and parsley together in a blender
  2. Season with salt and freshly ground pepper
  3. Preheat the oven to Gas Mark 4 or 180C
  4. Peel the mushrooms and remove the stem if required
  5. Drizzle the olive oil on the mushrooms and bake in the preheated oven for 15 minutes
  6. Take out the mushrooms from the oven and fill each one with the mixture.
  7. Finish by grilling until golden
  8. Sprinkle with chopped parsley and freshly ground black pepper
