Glamorgan Sausage Recipe
Newsreader Sian Roberts shares her recipe for the veggie-friendly Welsh sausage

Ingredients
- 200g breadcrumbs
- 120g cheese – mature cheddar/Caerphilly grated
- 1 carrot chopped
- ¼ leek sliced finely
- 1 tablespoon chopped parsley
- 1 teaspoon thyme
- 2 eggs
- 2 teaspoons of mustard (wholegrain/Welsh mustard)
- Salt and Pepper
Method
- Put 40g of the breadcrumbs to one side and mix the breadcrumbs, cheese, carrot, leek, parsley, and thyme together. Season with salt and pepper.
- Beat the eggs together with the mustard. Keep 2 -3 tablespoons of the mixture to one side. Add the remaining egg mixture to the breadcrumb mixture and bring together to form a dough.
- Divide the mixture into portions and shape into sausages. Dip into the egg mixture and then coat with breadcrumbs.
- To cook, heat a little oil and some butter in a frying pan and fry the sausages over a medium heat for 10-12 minutes, turning regularly until golden-brown and crisp.
