Welshcakes Recipe

Especially for Mal's early risers. Here's the delicious recipe for Welshcakes by newsreader Sian Roberts.

Ingredients

  • 250g Self–raising flour
  • Zest of 1 orange (or 1tsp mixed spice for traditional cakes)
  • 125g Welsh salted butter
  • 100g Caster sugar
  • 60g Chocolate chips (or sultanas for traditional cakes)
  • 1 large egg
  • 1 tablespoon of milk

Method

  • Preheat the bakestone / griddle – it needs to be really hot.
  • Mix the zest of the orange with the flour.
  • Rub the butter in until the mixture looks like breadcrumbs.
  • Add the sugar and chocolate and mix well.
  • Beat the egg and add to the mixture with the milk.
  • Mix well and bring together to form a dough. Start with a spoon and then use your hands.
  • Roll the dough out onto a floured surface, and cut into rounds.
  • Cook for a couple of minutes until brown.
