Welshcakes Recipe
Especially for Mal's early risers. Here's the delicious recipe for Welshcakes by newsreader Sian Roberts.

Ingredients
- 250g Self–raising flour
- Zest of 1 orange (or 1tsp mixed spice for traditional cakes)
- 125g Welsh salted butter
- 100g Caster sugar
- 60g Chocolate chips (or sultanas for traditional cakes)
- 1 large egg
- 1 tablespoon of milk
Method
- Preheat the bakestone / griddle – it needs to be really hot.
- Mix the zest of the orange with the flour.
- Rub the butter in until the mixture looks like breadcrumbs.
- Add the sugar and chocolate and mix well.
- Beat the egg and add to the mixture with the milk.
- Mix well and bring together to form a dough. Start with a spoon and then use your hands.
- Roll the dough out onto a floured surface, and cut into rounds.
- Cook for a couple of minutes until brown.
