The Lees from Warrington are loud, bubbly and fun, and are always looking for a wind up and a laugh. They describe themselves as a team of comedians, and cousin David refers to the twins as the Chuckle Brothers, because “they’re a laugh a minute”. However, when it comes to cooking their serious sides come out. The Lees are tidy and uniform cooks and discipline is key: “know your station and what your goal is.” Despite being the biggest joker of the group Ian likes to take charge, although twin brother Mark, a football referee, likes to think he’s the man to get everyone in order.
Ian has been fortunate to travel all over the world and has learnt many delicious recipes on the way, notably in Singapore and Thailand, which he loves to bring home and cook for his family. Ian and Mark’s father was a chef in the army and taught them to cook at an early age.
Cousin David grew up with twins Mark and Ian and has always been close with them. He started his career driving forklift trucks and by chance got an opportunity to run a traditional bacon butty van for truckers. His forte is cooking meat and his hours on the road in a tiny kitchen have got him used to keeping his cool when under pressure.

Tommy Banks

Born and raised in Oldstead, North Yorkshire, into a family of farmers, chef Tommy Banks’s passion for food and nature flourished from a young age.
Tommy’s family bought The Black Swan just as he finished school and he started working there with no real intention of becoming a chef, but by 2013, at the age of 24, Tommy was awarded a Michelin Star - making him the youngest Michelin-starred chef in Britain at the time.
