Amazing Avocado On Toast

How to make Matilda's amazing avocado on toast

Remember – those grown ups like you to tell them if you’re cooking with hot or sharp things!

Serves 2

Prep: 10 minutes

Cook: 1-2 minutes

For the avocado rose:

1 large, ripe but firm avocado

½ small lime

For the toast:

2 slices of ciabatta or sourdough bread

2-4 tbsp hummus

How to make Matilda's amazing avocado on toast

To serve:

tiny pinch chilli flakes (optional)

tiny pinch of sesame seeds (optional)

few coriander sprigs

extra virgin olive oil

salt and pepper

To make the avocado rose, cut the avocado in half and remove the stone.

Place the cut side down on a flat surface. Carefully peel away the skin and throw away.

Working from the narrow end of one of the avocado halves, using a knife, carefully cut into very thin slices. (You may need to ask an adult to help you do this.)

Carefully fan out the slices (so they are still touching) into an upside down ‘u’ shape.

Working from one side, roll the edge of the avocado fan inwards in a spiral, moving all the way along the length of the slices to create a rose shape. Repeat with the other avocado half.

Toast or griddle the ciabatta or sourdough slices and spread with the hummus.

Arrange an avocado rose onto each slice of toast, add a squeeze of lime and scatter with a pinch of chilli flakes or sesame seeds, salt and pepper. Drizzle with extra virgin oil and garnish with a few sprigs of fresh coriander. Serve immediately.
