Recipe: Shortbread Peanut Butter Squares

What are shortbread peanut butter squares?

When you combine chocolatey goodness with flaky biscuit and a gooey middle... you get these shortbread peanut butter sqaures! Junior Bake Off presents this delicious treat that's super easy to make at home with the recipe below.

Note: An adult must be present to supervise and help with preparation. This recipe contains PEANUTS 

Ingredients: 

  • 100g salted butter

  • 50g caster sugar

  • 150g plain flour

  • 450g roasted & salted peanuts

  • 4 tbsp honey + 2 tbsp for layers

  • 2 tbsp peanut oil

  • 180g dark chocolate

  • 20g butter

Method: 

  • Preheat oven to 170C.

  • Line and grease an 8" square brownie tin.

  • Place butter, sugar and flour in a food processor until it all comes together to make your shortbread mixture.

  • Press the shortbread mixture into the tin, using a mini cranked palette knife to make sure it is smooth and even.

  • Cook for 20 mins, until golden in colour. Remove shortbread from oven and allow to cool for 5 minutes, before placing the whole tin in the fridge.

  • Meanwhile make the peanut butter by placing the peanuts in a food processor with the peanut oil and honey and whizzing until it looks like peanut butter.

  • Break up chocolate and butter and place in a bowl on a saucepan of simmering water and carefully stir until the mixture has melted and has no lumps. Then remove from heat.

  • Remove the tin from the fridge and paint a layer of honey onto shortbread to act like glue, then put the peanut butter on top as the next layer.

  • Pour the melted chocolate mixture on top of the peanut butter layer.

  • Place tin in fridge/freezer until set.

  • Remove peanut butter short bread from tin and divide into 9 equal portions.
