Breakfast Master Chef Rob Kirby's healthy tuna wrap
4 x 125 g fresh tuna steaks
4 x flour tortilla wraps
2 x red onions
100g rocket leaf
200g cooked fresh French fine beans chopped in half
100g sun-blushed / fresh tomatoes quartered
100g black olives chopped
1 x lemon
1 x clove crushed garlic
Smear fresh tuna steaks with garlic and rub with a little olive oil. Season with ground black pepper. Sear tuna on a hot char-grill and then place in oven (gas mark 5, 190oC) for 5-8mins Place onions, beans, tomatoes and olives in a bowl and gently fold in rocket leaf. Remove tuna from the oven and allow to sit for five minutes. Flake the tuna into the salad bowl and gently mix. Finally, drizzle with a little olive oil and freshly squeezed lemon. Lay out 4 flour tortillas on plates and fill with tuna salad and wrap. Serve with a chunk of char-grilled lemon. Enjoy!!
