Organic food, once considered a bit of a niche market is now a real force to contend with. It's production is strictly governed by the Soil Association - the director of which is Patrick Holden who is one of the pioneers of organic farming in Wales. Dividing his time between the family farm on the outskirts of Lampeter and the Association's base in Bristol Patrick is keen to promote the benefits of farming organically to produce a new food culture that sustainable in the future. And it's something his children have taken on board - four of the eight of them have gone into agriculture in one form or another - including son Sam and his wife Rachael who have given up city life in London to become cheese makers with their Hafod Cheese.
