When I was a lad, my mother used to make potato fritters. I tried to make them once but made a mess of them (tasted nothing like my mothers), can anyonbe tell me how they should be made.

Rob,I make lobby for my family weekly through the winter here in Sydney Australia,They all love it.I make it with Shin beef or stewing beef I boil that up with onions,then let it simmer most of the day.later adding carrots turnips parsnips potatoes and celery.I add beef cubes pepper and Bisto or other gravy thickener.I dont add salt untill its finished,sometimes it doesn't need it.The thing with lobby is you put whatever veges you have on hand.You can make it with veal hocks too its lovely.You can also add barley etc.Just a matter of dicing everything up chunky.My mum used to boil up chuck bones to,to get the goodness out of them.We get colds or flu here,on goes the lobby.lol..Just remember to use a massive pan'cos they'll all want extras.By the way I was born in Wolstanton Newcastle staffs.

How patronizing of you in your article about lobby! Many, many people cannot afford to not use up leftover meat these days. do you really think poverty has been eliminated? Plus, using up all of something is part of caring about our environment, as resources are limited. You take the tone of voice that you are just so much better than all those poor people who have to eat lobby, and Honey, you aren't.

Hi. thanks for your recipe, I will try to make them in near future, because I have not eaten them for a long time. But I did not forget how they taste. I lived in Stafford about 2 years and I miss them since I left England.I used to eat it with chopped tomatoes, cheese and bacon. And I must say that oatcakes is a delicious quick meal. Before I came to uni here I had never had an oat cake or even heard of them but now when im back in my home town I will go and find them in the local supermarket even though I didnt know they sold them before

I have been living in the stoke area for 3 years now, and yet to eat an oatcake. Am I really missing out?

oatcakes are the best!!! Am currently trying to master the perfect recipe so will let you know how it goes. Also my mum used to do lobby with the left over chicken from sunday lunch, veg potatoes etc but you need to boil the left over chicken (whole) for a few hours then add everything else once you take thew carcass out then re boil with a touch of pepper and maybe a beef oxo cube to flavour. great for the winter months in front of the fire :)

I love Lobby! My grandma, from Talke, moved to Manchester, in service a hundred or so years ago. She then settled there and introduced lobby to her daughter in law, my mother, who still makes it, I also make it and now live in Yorkshire, so it's travelled around. We stew the stewing or shin beef with onion, dice and boil the potatoes and carrots seperately, then when all cooked mix together. Add dumplings and complete the cooking. The ingredients retain some of their own taste.Unfortunately my daughter doesn't like it so could it be the end for the lobby tradition??I was disappointed when I paid a visit to Staffordshire, got excited when I saw 'Lobby' being served in a pub, only to find they'd sold out.
