Alan Richardson (5-75) did all the damage as the visitors were reduced to 144-4 after losing the toss.
But Hussey hit 117 not out, adding 127 runs with Chris Read (63) for the fifth wicket, to steer Notts to 399-6 at the close of play.
New Zealand captain Stephen Fleming made a duck on debut, caught behind.
Wicket-keeper Ben Scott combined with Richardson for three dismissals, including visiting skipper Jason Gallian for 56.
Hussey also shared in a partnership of 101 with Mark Ealham before the latter was trapped lbw to hand Richardson his fifth five-wicket haul in first-class cricket.
