Baked fish in rich tomatoey sauce
Serves 4

Ingredients

onions 2, sliced
olive oil
garlic 4 cloves, sliced
plum tomatoes 2 x 400g tins
plaice or other white fish fillets 4 x 175g, skin removed
basil, a handful of leaves

Method
Heat the oven to 190C/fan 170C/gas 5. Put the onions with a little (think tsp not tbsp) olive oil in an ovenproof dish. Cook for 15 minutes until softened and tinged with brown. Stir in the garlic, tomatoes and some seasoning and return to the oven for another 30 minutes. Sit the fish on top of the sauce, season and bake for a final 15 minutes. Tear over the basil and serve.
