Ingredients: 100g Arborio rice (washed) 50g caster sugar 1/2 litre whole milk 10g butter 1 egg yolk 1/2 vanilla pod, split and scraped
Method: 1. Boil the milk with the vanilla 2. Add the rice and stir back to the boil, turn down to a gentle simmer stirring frequently until the rice is just cooked. 3. Stir in the sugar and finish with the butter and egg yolk 4. Correct consistency if needed with a touch of milk 5. Top with freshly grated nutmeg and glaze under the grill very lightly.
