Potato Baskets

Ingredients

1 kilo of potatoes
1 egg
1 spoonful of butter
2 spoonfuls of breadcrumbs
salt and pepper

Method

Cook and mash the potatoes, melt the butter and add it to the puree. Add the egg and beat for 10 minutes. Cover your hands with flour and form balls from the mashed potato, then dip them in the breadcrumbs. Place in a buttered dish.

With a small spoon, make a hole in the centre of the potato balls and fill with any of the following fillings; ham and onion with a touch of cream, leftovers of meat, chicken, shellfish or vegetables.
