Oriental Coleslaw
Soy sauce is a useful way of adding umami to a salad. Mix it with sour vinegar, sweet honey and bitter sesame oil and you have a dressing that lessens the bitterness of the cabbage and enhances the sweetness of the carrots.

Ingredients

1 tbsp Kikkoman soy sauce
½ tablespoon of honey
½ tablespoon finely diced fresh ginger
1 clove of garlic, finely chopped
1 tbsp white wine vinegar
2 tbsps toasted sesame oil
1 tbsp olive oil
½ small red cabbage, finely sliced
6 spring onions, trimmed and sliced
2 carrots, peeled and roughly grated
½ lime
a handful of fresh coriander leaves

Method

1. Whisk together the soy sauce, honey, ginger, garlic, white wine vinegar, sesame oil and olive oil. Set aside.

2. Put the sliced cabbage in a large mixing bowl with the spring onions and grated carrots. Toss in the dressing and chill until needed, then squeeze over the lime juice, remix and serve scattered with coriander leaves.
