Supermarket sales of beetroot are up by 50%. It's a vegetable whose popularity has been in decline but it's increasingly back in vogue as the range of beetroot recipes expand.
Chef, Simon Rimmer, has long been a fan of the vegetable and has taken inspiration from Thailand.
