Dan Lepard's special recipe

Leavened bread is bread that has risen and traditionally bakers used home made leaven to make bread rise.

Most bread these days is made with packet yeast which ferments and releases carbon dioxide puffing up the dough. However, professional baker Dan Lepard, says it’s time to revert to traditional methods and make our own natural yeast.
In the first our series on bread making Angharad Law went to meet Dan to master the art of making leaven.
