According to High Street retail indicators, the one true growth area in consumer spending this summer seems to have been anything connected with barbecues. Anyone would be forgiven for thinking it was a new phenomenon.
The word itself is derived from the Spanish Barbacoa which refers to cooking in the open air on an open fire. The English version in fact made its way into the language in the seventeenth century.
