Janice Houghton Wallace with turkey
The Cinderella’s of the Poultry World

Janice Houghton-Wallace likes turkey, but not just on Christmas Day accompanied by chipolata sausages, bacon rolls and bread sauce. She has almost a hundred of the birds roaming around her small holding at Wigtownshire in south west Scotland. They include special breeds like Bourbon Reds, Slates and Norfolk Blacks. Janice is joint founder of the Turkey Club U.K. She says she wants to spread the word about the bird she calls the 'Cinderella of the poultry world’. Caz Graham went to meet her.
