Smoked Fish with Avocado Sauce (serves 4) Ingredients 1 avocado (about 8 ounces) 2 tbls lemon juice 2 tbls mayonnaise salt and pepper A dash of cream 8 ounces smoked fish 8 cooked prawns 4 lettuce leaves Method 1, Cut avocado in half, remove the stone. Peel and cut up. Mash and add lemon juice, mayonnaise, salt, pepper and a tablespoon of cream to make it soft. 2. Trim any skin or bones from smoked fish. Place lettuce on plate and put fish, then coat with sauce. 3. Place sauce on smoked fish at the last minute, to prevent discolouring. 4. Garnish with chopped parsley or coriander and wedges of lime or lemon. This is a rich dish, so don't be overgenerous. |
