Boxty Cake with Bacon and Eggs

Four servings requires:

4 potatoes
1 medium onion
4 scallions
1 tblspn mixed herbs
100 grms flour
100 grms melted butter

Method

Par boil your potatoes so they are still slightly hard in the middle and leave to cool.

Dice your onion and chop your scallions.

With a knob of butter, sweat off the onions, herbs and scallions in a saucepan until soft.

Grate the potatoes into a large mixing bowl. Add the scallions, onions and herbs.

Add in the melted butter and mix well. Add enough flour to bind the mixture.

Season well.

Using the rest of the flour, dust a work surface.

Take a handful of the mixture and on the work surface mould it into a cake that’s roughly the size of a saucer and about half-an-inch thick.

If you find the mixture too sticky, just add more flour.

Let the cakes set in the fridge for about half-an-hour or even overnight.

Then, in a frying pan on a medium heat, brown both sides and place in a moderate oven to heat through.

While they are in the oven you can cook the eggs and bacon, or a few nice sausages.

Serve on warm plates. It should get your day off to a really good start!
