Recipe for good health

Local herbalist Trudy Norris reveals one of her herbal remedies to beat the winter blues.

Syrups are particularly useful for the pulmonary and digestive systems. Just about any herb can be used to make a syrup.

Ingredients:

40g/11/2 oz chopped herb (e.g. Garden Thyme)
900 ml water
450g sugar or honey

1. Put the chopped herbs and water into a pan and bring to the boil. Cover with a tight fitting lid, turn the heat down and simmer for 20 minutes.

2. Allow the liquid to cool a little and strain into a measuring jug. Press the herb with a spoon to extract the goodness. Keep the liquid and put the herbs on the compost heap.

3. Return the liquid to the heat and simmer gently, uncovered until it has reduced to 200 ml. This mixture is termed a decoction.

4. Add the sugar or honey to the pan. Dissolve it slowly and simmer for a few minutes stirring continuously. Let the mixture bubble for a moment but be careful not to make Thyme toffee!

5. Pour the mixture into a clean glass bottle. Make sure you label and date the bottle clearly.

Typical dosage:
Adults 2-3 teaspoons 3 to 4 times per day.
Children 1 teaspoon 3-6 times daily. Most children like syrups!
