| Traditional Rice Pudding (Serves 4) |
3 desst. pudding rice 1 desst. granulated sugar 600ml (1pt) full cream milk a nut of butter freshly grated nutmeg Set oven at gas 4/400 F/200 C/Aga baking oven. Wash the rice before putting it into a one pint oven-proof pudding dish.
Add all remaining ingredients and stir well. Place on a baking tray and bake for 20-30 mins. in the pre-set oven, then reduce the temperature to gas 3/300°F/150 C/Aga simmering oven for a further 1 hr. or until the milk has been absorbed into the rice and the texture is soft and creamy.
Serve hot or cold. Lazy Cook tips - my Mother always added a handful of sultanas to the pudding before it was cooked. Put cold rice pudding into individual wine or sundae glasses. Top with vanilla ice-cream then with slices of pear (fresh, or from a tin). Top with a spoon of whipped cream and finally scatter with a mixture of grated chocolate and chopped walnuts Lazy Cook tips - a quick and delicious pudding to make in minutes and full of delicious fresh flavours. To help speed up the assembly use ready-grated chocolate.
