Whole Roast Cauliflower

Try Mum's amazing recipe for a whole roast cauliflower for yourself! It will put a unique twist on a roast dinner classic! And no... it isn’t an alien, thanks Dad!

You will need
  • 1 whole cauliflower, leaves removed, the bottom should be trimmed and core/stem removed so the whole cauliflower stand straight up
  • 2cm of fresh ginger, peeled and chopped
  • 2 garlic cloves, peeled and chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp sumac
  • ½ tsp turmeric
  • ½ tsp ground cinnamon
  • 150g unsalted butter, softened

Instructions to make a delicious whole roast cauliflower

STEPS

  • Pre-heat the oven to 160C.

  • Put the prepared cauliflower onto a lined baking sheet.

  • Place the ginger, garlic and spices into a food processor and blend to a paste, then add the butter and blend.

  • Spread/smear the butter over the whole of the cauliflower and place in the oven for 40-50 minutes.

TO SERVE

  • Remove the cauliflower from the oven and place on a serving board, plate or platter.

  • Spoon the yoghurt over the top and garnish with the pomegranate seeds and fresh parsley.
