Yvonne's Indian inspired chicken 'dump bag'

It's the social media trend watched by millions - a freezer bag filled with uncooked ingredients, chopped and ready to throw into the slow cooker for a full meal. Also known as a 'dump bag', Yvonne Cobb shares her recipe of Indian inspired chicken, using the dump bag method.
Indian Inspired Chicken
4-6 people
Ingredients
6 carrots
2 large parsnips
8 baby potatoes
1 large onion
6 chicken thighs
3 tbsp tikka masala spices
Sprinkle of Indian black salt (or normal salt)
2 large tbsp tikka masala paste
2 tins chopped tomatoes
1 litre veg stock
To serve
Basmati rice
Soured cream
Coriander leaves
Cucumber (optional)
Method
Chop up 6 washed carrots (keep skin on), 2 large parsnips and 8 baby potatoes into similar chunky sized shapes and slice 1 large onion.
Get your freezer bag, add 6 chicken thighs and sprinkle over 3 tbsp of tikka masala spices and Indian black salt (or normal salt). Massage into the chicken until coated.
Add your chopped carrots, parsnips, baby potatoes and onion into the bag.
Add 2 large tbsp of tikka masala paste, 2 tins of chopped tomatoes and 1 litre of veg stock into the bag.
Seal the bag tightly, lay it down and gently pat until flat.
Place in the freezer until needed.
When you're ready to cook, first defrost thoroughly in the fridge overnight.
Once fully defrosted, empty the bag into the slow cooker and cook for 6 hours.
Then you have the most lovely comforting Indian inspired soft chicken with warmly spiced vegetables.
Serve with some rice, soured cream, coriander leaves and chopped cucumber (optional).
