Anna Haugh's honey alternative

Now's the perfect time to make your own honey alternative because it's Spring, and you can infuse your syrup with lovely floral aromas.
INGREDIENTS:
200g of sugar - caster is best, you can also use demerara sugar if you'd like a different flavour profile with notes of coffee in there. Finer sugar works better, so if you've only got granulated, but you do have a high powered blender, you can give it a quick whizz for a finer consistency.
150ml of water.
A floral ingredient of your choice! Anna likes:
Dried food-safe lavender.
Food safe rose petals - flowers from the shop will often be sprayed with pesticides so make sure you don't use those!
Lemon zest.
Blood orange zest.
Thyme.
Apple blossom.
Wild garlic.
Chilli flakes.
However you want to flavour your honey!
METHOD
Boil your sugar and water on the hob on medium heat, stirring constantly.
Wait for it to darken slightly and then switch it off - it will burn quickly so be careful - this should take 4-5 minutes.
Put your floral ingredients into a jar and pour your syrup mixture over the top. As it cools, the flavour will infuse. Wait for it to cool completely before screwing the lid shut.
