Briony's one pot tomato and goat's cheese pasta

A delicious and simple one pot pasta recipe.

Roasted Tomato and Goat's Cheese Pasta
Serves: 4
Ingredients:
- 400g dried pasta
- 1 tbsp olive oil
- 250g cherry tomatoes
- 1 tin chopped tomatoes
- 1 tbsp tomato purée
- 1 vegetable stock cube
- 600ml boiling water
- 2 tsp smoked paprika
- 2 tsp mixed herbs
- 1 tsp chopped garlic
- 1 tsp onion powder
- 150g goat's cheese
Method:
Preheat the oven to 180C fan/200C. Place all the ingredients in an oven-proof dish, apart from the cheese. Mix well to make sure the pasta is covered. Cover with foil and place in the oven for 25-30 minutes, stirring half way through.
Remove from the oven, crumble over the goat's cheese then return, uncovered, for a further 5-10 minutes until starting to melt.
