Ingredients

For the pancakes (makes 3 pancakes, one serving):

  • 30g plain flour

  • 10ml milk

  • 25g sugar

  • ¼ tsp cream of tartar

  • ½ tsp baking powder

  • 2 egg whites

  • 2 egg yolks

For the topping:

  • ¼ pineapple, diced

  • 1 tsp sugar

  • Handful chopped mint

  • 2 tbsp greek yoghurt

Method

  1. Mix the flour, milk, egg yolks and 15g sugar together in a large bowl.

  2. Whisk the egg whites, 10g of sugar and cream of tartare in a separate bowl with an electric whisk until they form soft peaks.

  3. Fold the two mixtures together. Take care not to over-mix, as this would beat the air out and make the pancakes less fluffy.

  4. Heat a flat saucepan on a low heat with butter. Add a large tablespoon of mixture per pancake. Allow to cook for four minutes, then turn over and cook for a further four minutes.

  5. For the topping, finely dice pineapple before adding chopped mint and sugar. Serve over the pancakes.
