Anna Haugh's fluffy Japanese-style pancakes

On Tuesday 17th February, professional chef, restauranteur and Masterchef judge Anna Haugh joined Morning Live to demonstrate her fluffy Japanese-style pancake recipe.
These light pancakes are delicious when topped with zingy macerated pineapple and a dash of hot honey. It can also be multiplied as many times as needed.

Ingredients
For the pancakes (makes 3 pancakes, one serving):
30g plain flour
10ml milk
25g sugar
¼ tsp cream of tartar
½ tsp baking powder
2 egg whites
2 egg yolks
For the topping:
¼ pineapple, diced
1 tsp sugar
Handful chopped mint
2 tbsp greek yoghurt
Method
Mix the flour, milk, egg yolks and 15g sugar together in a large bowl.
Whisk the egg whites, 10g of sugar and cream of tartare in a separate bowl with an electric whisk until they form soft peaks.
Fold the two mixtures together. Take care not to over-mix, as this would beat the air out and make the pancakes less fluffy.
Heat a flat saucepan on a low heat with butter. Add a large tablespoon of mixture per pancake. Allow to cook for four minutes, then turn over and cook for a further four minutes.
For the topping, finely dice pineapple before adding chopped mint and sugar. Serve over the pancakes.
