The signals coming into a mixer can vary greatly in their levels.

How to... Home recording basics
Some may be microphones from the vocal booth while others may be line levels from synths, which will be many times louder than any mic signal.

The gain knob is there to balance out all the basic levels.

That way the signals will be at the ideal level - not too loud, not too quiet - for the rest of their passage through the desk.

Gain can also add 'bite' to sounds.
